PURPOSE:To improve the qualities, especially preservability of foods, by adding glycine, ethyl alcohol and a condensed phosphoric acid salt to food. CONSTITUTION:In the preparation or processing of foods such as cakes, side dishes, noodles, fish paste products, meat products, etc. 0.5-2% of glycine, 0.5- 3% of ethyl alcohol and 0.1-0.5% of one or more condensed phosphoric acid salts such as sodium or potassium salt of polyphosphoric acid, pyrophosphoric acid, or metaphosphoric acid, are added to the foods. |
