PURPOSE:The extrusion molding under high pressure is applied to produce artificial rice enriched with vitamin A with advantage. CONSTITUTION:For example, a rice powder of fine particles only or a mixture thereof as the major component with a starch such as sweet potato or potato starch is used and it is combined with calcium secondary phosphate in order to increase its density. Then, an aqueous suspension of vitamin A or a vitamin mixture mainly consisting of the same is added to such a extent as the material for artificial rice is made wet. Finally, the composition is extruded under high pressure by means of a puff machine into rice grains and simultaneously the starch is converted into the alpha-form. |
