PURPOSE:To prepare a purified fructan solution having improved coloring properties and high purity, by treating an extracted fructan solution with a pectin hydrolyzing enzyme. CONSTITUTION:An extracted fructan solution having preferably about 2- 30wt% solid substance concentration obtained from tissue of a Jerusalem artichoke, a chocory, etc. by a conventional procedure is treated with a pectin hydrolyzing enzyme or a fungus having pectin hydrolyzing activity extracted from a fungus belonging to the genus Rhizopus.
