A continuous process for sterilizing liquids, especially milk, comprises preheating the liquid by indirect heating, rapidly heating the liquid under pressure by indirect heating to the sterilization temperature, passing the liquid after at least partial pre-heating or after sterilization to a vessel maintained at subatmospheric pressure so that the liquid boils, thereby cooling and at least partially degassing the liquid, condensing the vapour evolved, and returning the condensate to the liquid, preferably to a point prior to sterilization. After preheating, but prior to heating to sterilization temperature, the liquid may be maintained in a holding vessel to allow stabilization of solids dissolved, suspended, or dispersed therein. A low pressure degassing vessel, similar to that employed after sterilizing, may be introduced between the preheating and sterilizing steps.
