PURPOSE:To obtain a delicious food-like bean curd, free of fishy smell, by treating fish meat with a proteinase and mixing the product with ground fish meat and egg. CONSTITUTION:Fish meat is treated with a protein-decomposing enzyme such as proteinase, aminopeptidase, etc., and/or a microorgannism belonging to Aspergillus genus or Streptococcus genus, etc., and capable of digesting protein. 1pt.wt. of the obtained pasty product is mixed with preferably 0.5-1.5pts.wt. of ground fish meat and 0.1-0.5pts.wt. of vegetable protein and/or 0.2-0.5pts.wt. of egg and the mixture is heated to obtain the objective food. |
