<p>PURPOSE:To produce high-quality SHOCHU (low-class distilled drink) from an inexpensive processed cereal saving the labor, by pulverizing and kneading nonglutinous rice, extruding in the form of noodles, steaming and drying the noodle-like product, using the processed rice as a raw material for the secondary fermentation without steaming and distilling the produced unrefined fermentation product. CONSTITUTION:Nonglutinous rice is washed with water, softened by impregnating with water, pulverized, pressed with a plunger pump, etc., kneaded, put into a metallic cylinder furnished with a perforation plate, and pressed from above to obtain noodle-like extrudate. The product is flattened with a press, converted to thin noodle-like strips with a hydraulic press, steamed, dried, washed, dehydrated and dried, and used as a raw material of the secondary fermentation without steaming. The produced unrefined fermentation product is distilled to obtain the objective SHOCHU.</p> |
