PURPOSE:To obtain the titled kneaded fish meat using waste such as head, head meat, fish central meat, etc., which are abandoned in bonito processing without damaging taste, by heat-treating bonito waste meat removed in bonito processing, successively pressing the meat, defatting and blending the meat with raw bonito waste meat. CONSTITUTION:Bonite waste meat removed in bonito processing is heat-treated (preferably meat texture is destroyed by grinding, etc., before treatment and after meat collection), successively pressed, defatted, then the defatted meat is pulverized, blended with raw bonito waste meat, ground by a conventional procedure, molded, heated, smoked and dried successively to give the aimed dried kneaded meat. Preferably the bonito head removed in the bonito processing is made into ground bone pieces of <=5mm to give paste which is used.
