PURPOSE:To obtain the titled AMAZAKE having excellent aroma industrially and readily, by saccharifying a starchy raw material, adding citron juice into a specific pH and sterilizing. CONSTITUTION:A stably raw material is saccharified with rice KOJI or an enzyme, citron juice is added to the saccharified solution until pH of the solution becomes <=4.0 and then the saccharified solution is sterilized at 70 deg.C for 10min to give the aimed AMAZAKE containing citron.
