PURPOSE:To obtain the titled food slightly causing denaturation of protein and change of meat to sponge, by bringing a food such as meat through a semipermeable membrane into contact with a high-osmotic pressure substance to dehydrate the food, then heat-treating, cooling, redehydrating and freezing. CONSTITUTION:A food 6 such as fish (e.g. flatfish and horse mackerel) or animal meat (e.g. beef) is directly wrapped in a dehydrating sheet 1 obtained by packing a high-osmotic pressure substance (e.g. glycerin) 3 and a high polymer dehydrating agent (e.g. polyacrylic acid) 4 into semipermeable membranes (e.g. cellophane paper) 2 or by laying a semipermeable membrane 5 between the semipermeable membranes and the food. The food is dehydrated by 2-5%, then heat-treated, cooled, redehydrated, frozen and preserved to give the aimed food.
