PURPOSE:To readily produce jam of Prunus perisica Batsch. forma, by immersing fruit of Prunus perisica Batsch. forma in hot water, peeling the epidermis, exposing the flesh to air and coloring. CONSTITUTION:Fruits of Prunus perisica Batsch. forma are washed with water, dehydrated and put in a container. Hot water at 100 deg.C is added to the fruits in such a degree as to dip the fruits in the hot water. The fruits are allowed to stand for about 5 minutes and the hot water is abandoned. Then the fruits are fed to a rotating machine, collided and brought into contact with each other to peel the epidermis completely. The prepared flesh is transferred to a container, exposed to air while stirring and colored. A shade of color can be selected by degree of exposure to air. Jam is produced from the colored flesh by a conventional procedure. |
