PURPOSE:To obtain jelly having excellent flavor and texture and stable qualities, by coating soft jelly not to be gelatinized with a polyvalent metallic ion at the center with hard jelly to be gelatinized with the polyvalent metallic ion at the outer coating. CONSTITUTION:Soft jelly comprising gel of a gelatinizing composition containing a gel base such as agar or HM pectin not to be gelatinized with a polyvalent metallic ion such as Ca<2+> or Mg<2+> is used as the center. Then the soft jelly is coated with hard jelly of outer coating of a gelatinizing composition containing a gel base such as alginic acid or LM pectin to be gelatinized with the polyvalent metallic ion. Then when the coated jelly is immersed in a gelatinizing bath containing the polyvalent metallic ion, the jelly is gelatinized to form the hard jelly of the outer coating. Consequently, soft jelly having soft texture and good crispness is wrapped with the hard jelly. |
