PURPOSE:To provide the title production process so designed that food temperatures when the food is packed in a container and when it is closed are made, respectively, to fall in specified ranges, thereby ensuring the food to be closed in the same state as that in the case of deaeration sealing with a lid leading to preventing the moisture condensation within the container, thus obtaining the title food such as rice. CONSTITUTION:A heat-resistant (semi)rigid container is packed with a solid food with moisture activity of >=0.85 under such a condition as to be <=70 deg.C in temperature for the food. Thence, the resultant container is closed with a flexible, heat-resistant lid under such a condition as to be 40-60 deg.C in temperature for said solid food followed by heating treatment under pressure, thus obtaining the objective food. |
