Device which makes it possible to measure physical chemical parameters of material consisting of organic waste inside a fermenter for producing methane and to remove samples therefrom. The invention relates to a device which makes it possible, by means of a pitting 6 placed on the outside of a fermenter 2 for organic waste, to introduce a probe 1 inside and, after opening a measuring chamber 18, to sample therefrom and to measure physical chemical parameters (pH, conductivity and the like) of the organic material in place. The device according to the invention is especially intended for fermenters for organic material for the production of methane in factories for treating household refuse. <IMAGE>
