The invention relates to a tetanisation method intended to facilitate the operation of removal of the skin from a butchery animal comprising the phases a) of attaching a part 5 of the animal's body to a fixed point, and b) of skinning 24 the animal's skin 25 by pulling on this skin from the part of the body attached to the fixed point. According to the invention, prior to the phase b), c) tetanisation of the animal's muscles is carried out by applying at least a first electrode 22 onto the face 12 of the animal's body opposite that 26 of the skinning cited in b), so as to obtain the tetanisation of the slaughtered animal's muscles.
