The immunochemical reactant for identifying and quantifying a test-protein substance present in a food product consists of at least one monoclonal antibody directed against a test-protein present in the said food product and denatured by a heat treatment performed at a given treatment temperature for a specified period. Application of the said reactant to the identification and quantification of a test-protein present in a food product to be tested.
