The invention relates to a pneumatic press permitting a pressing which processes (organises, treats) the fruits and supplies high-quality juices. The press is particularly arranged so as to reduce the risks of interruption of the work owing to damage or obstructions. The press (60) includes a longitudinal channel, the perforated walls of which are formed by two series of longitudinal bars (61,63) arranged alternately and separated by slots. These bars are supported by respective frameworks (62) with which they constitute a fixed grid and a movable grid. The movable grid slides to and fro by virtue of pneumatic jacks (65), at the same time driving a longitudinal pusher (64) which causes the fruits to advance in stages in the channel. The result of this is a self-cleaning of the slots between the two grids. Successive pneumatic pressing elements with membranes, placed in the channel, are inflated to increasing pressures in order to press the fruits laterally after each advance stage. The invention is applicable to fruit presses, particularly for grapes. <IMAGE>
