PURPOSE:To massively produce a highly safe angiotesnin transferase-inhibiting peptide mixture at a low cost by simple operations by hydrolyzing wheat protein with an acidic protease and subsequently extracting the product with an alcohol. CONSTITUTION:Wheat protein is hydrolyzed with an acidic protease (preferably pepsin, an, acidic protease originated from koji) in an aqueous medium, or further with a neutral or alkaline protease (preferably thermolysin or satilysin). Insolubles are removed from the hydrolysis product, and the aqueous medium is removed from the remaining solution to obtain a concentrate, which is extracted with an alcohol (preferably ethanol) to provide a peptide mixture as an alcohol-soluble fraction. |
