PURPOSE:To provide the subject boiled rice useful for restaurants, etc., in a massively producible state, by charging specific water-absorbed rice into a mold, falsely molding the rice by the application of a pressure, heating the falsely molded rice in a state placed in the mold with hot water, etc., and subsequently demolding the molded rice from the mold. CONSTITUTION:Rice is treated with 60 deg.C or higher hot water and/or steam to prepare water-absorbed rice containing the water in an amount of 38-115 pts.wt. per 100 pts.wt. of the rice. After stored by freezing and/or refrigerating the rice, by immersing the rice in water and refrigerating the mixture or by continuously exchanging water, or without being stored, the water-absorbed rice is charged into a mold, falsely molded by the application of a pressure, heated with hot water, pressed steam, direct flame, etc., in the state charged in the mold, and subsequently demolded to provide the objective boiled rice. The molded boiled rice is preferably received in a closed container or a bag for retort, thermally sterilized and subsequently stored at the ordinary temperature. |
