The present invention relates to a charcoal manufacturing process comprising the following steps: (i) wood is loaded into at least one kiln (1); (ii) combustion of a small part of said wood is started and, simultaneously, the air inlet or inlets (2) of said kiln (1) are opened; (iii) the wood loaded into said at least one kiln (1) is subjected to a carbonization reaction so as to obtain charcoal; (iv) optionally, the carbonization reaction is stopped by closing off the air inlet or inlets (2) of the kiln (1); (v) the charcoal is removed from the kiln (1) to a container (3); and (vi) the charcoal obtained undergoes a cooling phase in said container (3) before being removed therefrom when cold. The invention also relates to a charcoal manufacturing device capable of implementing such a process.
