摘要 <P>PROBLEM TO BE SOLVED: To provide flour paste such as flour paste and custard, useful as topping and filling of bread and confectionery, excellent in spreadability and expandability in spite of having high oil content, and excellent in heat resistance, and to provide a method for producing the same. <P>SOLUTION: The flour paste such as flour paste and custard contains 2-10 mass% of starch, 0.05-5 mass% of a whey protein isolated product, 8-50 mass% of oil and fat, and 8-30 mass% of saccharide. The method for producing the flour paste comprises homogenization treating a flower paste raw material which contains 2-10 mass% of starch, 0.05-5 mass% of a whey protein isolated product, 8-50 mass% of oil and fat, and 8-30 mass% of saccharide, and heating the product followed by cooling. <P>COPYRIGHT: (C)2009,JPO&INPIT
