Described is a process for the preparation of a food product of the snack type, which includes the following steps: preparing a meat product that contains a water activity lower than 0.86; cutting the meat product in slices or slight pieces; drying and toasting said slices or pieces of meat product by both the upper and lower surfaces thereof in a generally simultaneous and homogeneous manner using an oven, this latter element at least an upper heating panel and at least a lower heating panel, obtaining a food product of the snack type; cooling the food product in a cooler and packaging the snack type product so as to be finally consumed.
