<P>PROBLEM TO BE SOLVED: To provide an emulsion composition for a soybean curd coagulated agent whose coagulation rate is moderately delayed, with which soybean curd having fine texture and favorable quality can be produced, and which contains a polyglycerol-condensed ricinoleic acid ester comprising slightly viscos, transparent and homogeneous solution. <P>SOLUTION: The emulsion composition for a soybean curd coagulated agent contains (a) a polyglycerol-condensed ricinoleic acid ester, (b) a polyalcohol fatty acid ester having a coagulation point of ≤15°C, and (c) water, wherein the prescribed transmission is ≥88%. <P>COPYRIGHT: (C)2008,JPO&INPIT |
