摘要 PROBLEM TO BE SOLVED: To develop a fermentation yeast discrimination method, by which the accurate discrimination, separation and identification of a fermentation yeast can rapidly, accurately and easily be performed. SOLUTION: This fermentation yeast discrimination method includes amplifying the genome DNA of the fermentation yeast by a PCR method using a primer for amplifying a part or whole of a DNA sequence containing FLO5 gene and YHR213W gene or YAR062W gene, electrophoresing their amplified gene fragments or electrophoresing the amplified gene fragments after a restriction enzyme treatment, and then discriminating the yeast by the difference of the pattern of the electrophoresis. Consequently, the accurate classification and discrimination of the fermentation yeast can quickly and easily be performed.
