PROBLEM TO BE SOLVED: To provide a method and an apparatus for methane fermentation of organic waste, in each of which the running cost can be reduced and fermentation-unsuitable materials which do not contribute to fermentation can be removed efficiently. SOLUTION: In the apparatus for methane fermentation of organic waste is used for methane fermentation of organic waste and recovering resources such as biogas, organic waste slurry 10 is thrown in a slurry adjustment tank 12. When the solid concentration of the organic waste slurry 10 is 5-15%, an agitator 13 is set and the rotational speed of an agitation blade 13a is controlled so that an agitation intensity G value in the slurry adjustment tank 12 becomes 30-1,000 s<SP>-1</SP>. The lower part of the slurry adjustment tank 12 is formed to have a conical structure, so that inorganic matter such as an eggshell apt to accumulate is accumulated in the lower part and other organic matter is agitated effectively within the agitation intensity G values.
