PROBLEM TO BE SOLVED: To provide a rice cooker capable of finely distinctively cooking rice by adjusting sweetness, flavor, toughness (elasticity), and stickiness of freshly boiled rice. SOLUTION: The cooker includes a pot heating means 2, pot temperature detecting means 7, pressure adjusting means 9, and control means 13 for controlling the pot heating means 2. A rice cooking process has a first soaking step, a second soaking step requiring higher temperature than the first, and a cooking step where the temperature exceeds 100°C by pressure adjustment by the pressure adjusting means. Thus, in the first soaking step, water can be absorbed in a state that little elution from a surface part of the rice occurs by gelatinizing. Then, in the second soaking step, water absorption completes before much elution due to gelatinizing occurs, so that a generation amount of sugar can be efficiently adjusted. Moreover, in the cooking step, gelatinization of rice can be further facilitated and the hardness (elasticity) and stickiness can be adjusted by generating temperature over 100°C, so that the cooked state together with the sweetness and flavor can be more finely distinctively adjusted.
