A cutting device of a gate projection of a mold assembly and a cutting method thereof are provided to make an appearance of a product neat by preventing a trace of cutting through separating the gate projection before the product hardens completely. A cutting device of a gate projection of a mold assembly comprises the followings: a fixed plate(30) installed at a fixed unit of a molding machine, and attached with a first mold plate(32) installing a first core(36); a moving plate(50) installed at a moving unit of the molding machine, and attached with a second mold plate(56) installing a second core(60) for forming a cavity(58) corresponding to a product shape in cooperation with the first core; a pushing pin(66) installed penetrating the second core, to push and separate the product from the second core when pulling the product out; a gate pin(68) installed penetrating the second core, to push and separate the gate projection from the second core, which is formed in a supply path(42) for supplying material to the cavity, after the pushing pin pushes the product.
