Apparatus for removing the pelt from animal carcasses is disclosed. The apparatus includes a gas injection mechanism having at least one machine manipulated tool for piercing and injecting gas beneath the pelt of a carcass. A control system is arranged to cause the tool or tools to pierce the pelt of the carcass and inject gas to separate at least a portion of the pelt from the carcass.
