<P>PROBLEM TO BE SOLVED: To provide a Maillard reaction product-decomposing agent which has high Maillard reaction product-decomposing activity and can easily be used for drinks, foods and the like. <P>SOLUTION: This Maillard reaction product-decomposing agent contains an active substance selected from lotus leaf extract, Astilbe thunbergii extract, Engelhardtia chrysolepis H. leaf extract, Isodon japonicus extract, puer tea extract, Oenothera tetraptera extract, guava leaf extract, loquat leaf extract, onion outer skin extract, Apocynum venetum extract, olive leaf extract, catechin, and the like. The active substance in the Maillard reaction product-decomposing agent is soluble in water, does not produce or little produces a side effect against human bodies, can easily be compounded with drinks, foods, food raw materials, cosmetic compositions, and the like, and can widely be applied.
