PROBLEM TO BE SOLVED: To automatically adjust oil temperature management of fuel oil. SOLUTION: This optimum oil temperature management system of fuel oil in a fuel oil burner comprises a plurality of tanks 12 for storing the predetermined quantity of fuel oil; oil feed pumps 23 each selecting one of the tanks 12 to supply force-feed pressure to the stored fuel oil; fuel oil heaters 26 heating the force-fed fuel oil with heating steam to a predetermined temperature; a kinematic viscometer 16 for automatically measuring kinematic viscosity of the fuel oil in the tanks 12; a steam control valve 18 controlling the supply quantity of the heating steam so that the temperature of the fuel oil heated by the fuel oil heaters 26 is the optimum oil temperature for combustion corresponding to kinematic viscosity in front of the fuel oil burner based on the kinematic viscosity measured by the kinematic viscometer 16; and the fuel oil burner 27 supplied with the fuel oil with the temperature corresponding to the kinematic viscosity, from the fuel oil heater 26.
