Emulsion (A) for mould release of a hydraulic composite material parts (I) containing a dispersed lipidic phase (Ia) and an aqueous continuous phase (Ib), comprises: a fatty acid ester (II); an amphiphilic polysaccharide derivative (III) as stabilizer; and optionally a surface-active agent (IV). Independent claims are also included for: (1) preparation of (A); and (2) a process for mould release of (I), comprising supplying mould, applying (A) to the walls of the mould, casting (I) into the mould, allowing (I) to harden and removing the hardened (I).
