<P>PROBLEM TO BE SOLVED: To provide a method for reducing the bitter taste of a catechin-containing composition in high safety by using a CD (cyclodextrin) and provide a catechin-containing composition having reduced bitter taste. <P>SOLUTION: The bitter taste of a catechin-containing composition can be reduced by using a catechin-containing composition in combination with βCD and γCD or producing a clathrate of the bitter component of the catechin-containing composition and βCD and/or γCD by kneading the components. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
