PROBLEM TO BE SOLVED: To solve a problem that there is a difference of work efficiency and processing quality between experts and amateurs because a cutting operation for separating edible parts from inedible parts is left to old women and judgement of the position to be cut is left to indivisual workers in processing vegetables such as shallots. SOLUTION: According to this invention, an automated device is provided that executes a series of measuring (image-processing), cutting, discharging, and washing steps during one turn of a turntable once vegetables are manually set in the device using an image-processing technique for converting actual images of vegetables such as shallots taken by a camera into polygon figures, and clarifying shape characteristics of the vegetables to judge the cutting positions.
