The invention relates to salts of N-acyl-L-aspartate-ß-monoester and/or of N-acyl-L-glutamate-?-monoester of general formula (I), in which: M<SUP>n+</SUP> represents a metal or an oligoelement characterized by a valence state n greater than the unit (2 = n = 7); R<SUB>1</SUB> represents a condensation saturated or unsaturated alkyl or aryl radical having 1 to 30 carbon atoms; R is selected among the linear or branched, cyclic or aliphatic alcohols, and; y is equal to 1 for aspartic acid and is equal to 2 for glutamic acid.
