<P>PROBLEM TO BE SOLVED: To provide a method for serving conger eel in a restaurant enabling stored conger eel to be brought closely to a maximally soft and tasty condition just after steamed without needing long time and much labor after ordered by a customer. <P>SOLUTION: The method for serving conger eel 10 intended for serving a conger eel dish quickly and tastily in response to the order of a customer in a restaurant is provided, which comprises the step of properly manipulating conger eel 10 in its preparation stage and washing the resultant conger eel with water followed by hydro-extraction, the step of putting the thus hydro-extracted conger eel 10 into and boiling in a cooking soup 12 that is prepared by putting water, sugar, wine, soy sauce, and the like into a pan 11 followed by boiling, and the step of removing the boiled conger eel 10 from the broth 12a and storing the boiled conger eel 10. In serving the conger eel dish to a customer, the stored conger eel 10 is put into a steaming basket 13 and steamed, wherein the broth 12a after boiling the conger eel is used as steaming soup, and the conger eel 10 just after steamed is served to the customer. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
