Fats are extracted from raw material of animal, vegetable or marine origin by treating the comminuted raw material in counterflow with a water-miscible organic solvent or solvent mixture having a boiling point below that of water and distilling the extract to recover the solvent, water being added to the material before or during its treatment in order that the extract separates into at least two liquid phases, one phase being substantially a mixture of solvent, water and flavour components and the other mainly fat. Suitable solvents are acetone, and a mixture of equal volumes of acetone, ethyl acetate and ethanol.
