PROBLEM TO BE SOLVED: To provide an antioxidation antimicrobial fiber suitable for producing a woven or knit fabric having soft touch and excellent washing durability and usable for various textile products such as underwears, socks, shirts and underpants. SOLUTION: The antioxidation antimicrobial fiber is produced by attaching a polyphenol to a chitosan fiber having a deacetylation degree of≥60%. The antioxidation antimicrobial fiber has excellent washing durability as well as antioxidation property and antimicrobial property since a hydroxyl group of the polyphenol is firmly bonded to a highly reactive amino group of the chitosan fiber. The woven or knitted fabric manufactured by using the antioxidation antimicrobial fiber has a soft touch and is suitable for underwear, socks, shirts, underpants, or the like.
