<P>PROBLEM TO BE SOLVED: To provide kefir-like carbonic acid-containing yoghurt that is suppressed in excessive production of gas after production and is effective for improvement in I-type allergy, such as atopic dermatitis, hay fever and chronic rhinitis, and to provide a method for producing the yoghurt. <P>SOLUTION: The kefir-like carbonic acid-containing yoghurt is produced by inoculating as essential spawn, a prescribed amount of a combination of milk sugar nonfermentable yeast fungus Saccharomyces cerevisiae having antiallergy effect, and milk sugar fermentable lactic acid bacteria, to a main raw material which contains as the main ingredient a raw material which is prepared, by adding and mixing, as necessary, a proper amount of milk component, non-fermentable sugar of yeast fungus Saccharomyces cerevisiae, a shape retaining agent, and a syneresis-preventing agent to/with animal milk, and fermenting the product. <P>COPYRIGHT: (C)2008,JPO&INPIT |
