<P>PROBLEM TO BE SOLVED: To provide a production method for a yeast extract which has little odor intrinsic to yeast, favorable flavor, scent and color with a rich taste and a higher degree of clarity. <P>SOLUTION: The yeast extract obtained from a cultured yeast or a dried yeast is filtered out with an inorganic filter medium or preferably with a cross-flow microfiltration membrane filter. <P>COPYRIGHT: (C)2009,JPO&INPIT |
