An apparatus (40) for exposing comminuted foodstuffs to a fluid is disclosed. The apparatus has contactor body formed by two components (41/42) including a foodstuff flow passage. The foodstuff flow passage extends from the contactor body inlet end (44) to the contactor body outlet end (45). A portion of the foodstuff flow passage (46) is a contact passage (46), surrounding which is a processing fluid chamber (49). The processing fluid chamber (49) is divided in to a number of fluid chambers (61). The fluid chambers (61) includes an outer surface, spaced apart from an inner surface of the contact passage (56), so as to define an annular contact flow area having a minimum transverse dimension smaller than a minimum transverse dimension of the inlet flow area. There is a fluid communication arrangement providing fluid communication between the fluid chambers (61) and the contact passage (46) as well as a supply tube providing a fluid path (64) from a point outside of the contactor body to the interior of the processing fluid chamber (49).
