In an apparatus which measures the temperature of a material within a body by means of the radiation emitted by the body, the whole of the radiation path between the body and the sensor is enclosed by an insulated hollow member to exclude environmental radiation, and a focusing lens of the sensor is focused on to an external wall of the body through the hollow member. The temperature of a fluid being processed in a heating chamber is measured at entry, within the chamber, and at exit by such means, and the signals developed may be used to control the process. The insulating tube surrounding the radiation path is shaped to fit the curvature of the fluid carrying pipe and may be welded to it. Alternatively the tube may be flange coupled or secured by straps and a brace member.
