PROBLEM TO BE SOLVED: To efficiently produce high-quality bread dough having uniform texture as a whole in a short time. SOLUTION: A fixed resistance vane 80 for dough inversion is integrally formed in a form extending from an attaching washer plate 81 for an installation machine case 1 through a vane body 80a curved nearly in parallel to the inner wall face of a mortar 50 and declining forward to accommodate the rotating direction F of the mortar 50 to a guiding piece 80b curved inwardly from the lower front end of the vane body 80a. The bread dough M is automatically twined on the vane body 80a of the fixed resistance vane 80 according to the rotation of the mortar 50, and collected and guided to the rotational center part of the mortar 50 by the guiding piece 80b of the lower front part of the vane body while forwarding the bread dough.
