<P>PROBLEM TO BE SOLVED: To provide a new method for suppressing heat deteriorated odor of food and drink and drugs. <P>SOLUTION: This method for suppressing heat deteriorated odor of foods and drinks or drugs which contain sulfur-containing amino acid and/or unsaturated fatty acid is composed of including a sugar composition having characteristics (1) and (2) in the food and drink or the drugs, where characteristic (1) contains sugar component of a glucose polymerization degree (DP) of ≥10, and characteristic (2) forms no gel, when preserving 30 wt.% of an aqueous solution at 4°C for one day. The method for suppressing heat deteriorated odor can be applied to various wide fields, because of its being a simple and quick method. <P>COPYRIGHT: (C)2009,JPO&INPIT |
