PROBLEM TO BE SOLVED: To provide fermentation compost which is produced by decomposing porous organic waste, particularly, coffee grounds or buckwheat chaff in a short period of time, does not hinder the growth of crops, is inexpensive and has excellent fertilizer response as an organic material and to provide a method for producing the fermentation compost. SOLUTION: The fermentation compost is obtained by blending fish waste and trehalose with porous organic waste, particularly, coffee grounds or buckwheat chaff and fermenting the obtained mixture. The fish waste is blended by 5-120 wt.% of the coffee grounds or buckwheat chaff and the trehalose is blended by 2-0.001 wt.% of the fish waste. A concrete mixer is convenient and efficient for fermentation. When citric acid or its salt is further mixed in the obtained mixture in addition to the trehalose, the fermentation is promoted much more.
