PROBLEM TO BE SOLVED: To provide baked cake having no half-baked part, despite being reduced in calorie, having an inner phase whose texture is fine and homogeneous, and superior in taste and texture, and to provide a method for producing the baked cake. SOLUTION: The baked cake contains, based on 100 pts.wt. of wheat flour, 50-200 pts.wt. of erythritol, 50-200 pts.wt. of water, 1-50 pts.wt. of a foaming agent, and 0.01-50 pts.wt. of food polysaccharide. The method for producing the baked cake includes baking a composition for producing a baked cake which contains, based on 100 pts.wt. of wheat flour, 50-200 pts.wt. of erythritol, 50-200 pts.wt. of water, 1-50 pts.wt. of a foaming agent, and 0.01-50 pts.wt. of food polysaccharide.
