Kefir with improved probiotic properties comprises normalized homogenized pasteurized cow’s milk, a symbiotic starter, fructose and lactulose syrup. In doing so it comprises a mixture of three bifidus bacteria cultures, in particular Bifidobacterium bifidum, Bifidobacterium longum and Bifidobacterium adolescentis, with mixed cultures of lactic acid lactococci, in particular Lactococcus lactis ssp. lactis, Lactococcus lactis ssp. diacetilactis and Lactococcus lactis ssp. cremoris, pure cultures Leoconostoc mesenteroides and yeast Saccharomyces as the symbiotic starter. |
