A method for making a kvass wort concentrate includes boiling soft raw nonmalted material, preferably maize flour, with an enzyme preparation, making mash of the boiled mass, raw malted material and the enzyme preparation, saccharification the mash, filtering obtaining wort and concentrating thereof. The boiled soft mass is heated up to a temperature of 110-120 °С, while making the mash, the boiled mass is first cooled up to 78-82 °С and the enzyme preparation is added, after that cooled up to 47-50 °С and the raw malted material is added. In doing so rye and barley fermented malts or rye fermented malt and the enzyme preparation are used as raw malted material. |
