PROBLEM TO BE SOLVED: To provide a new additive composition for meat decoloration. SOLUTION: This additive composition for meat decoloration contains 1'- acetoxychavicol acetate or its analogue with a meat decoloration effect and a carrier allowable in a food science. Further a fat-soluble extract containing 1'-acetoxychavicol acetate-derived from Alpinia galanga and having a meat decoloration effect is provided. |
