<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a colored fermented liquor that takes advantage of colored potatoes that contain anthocyanin pigment as the raw material and that utilize anthocyanin pigment characteristics of colored potatoes. <P>SOLUTION: In the method for producing a colored fermented liquor, which has a saccharification process for using colored potato containing anthocyanin pigment as a raw material and preparing a saccharified solution and a fermentation process for adding yeast to the saccharified solution and fermenting the saccharified solution, and further has a process for adding rutin to the saccharified solution or the fermented solution. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
