<P>PROBLEM TO BE SOLVED: To provide a method for producing a fried food coating material, capable of efficiently obtaining a fried food coating material which sufficiently swells in cooking in oil, is less apt to adhere to each other with the passage of time, facilitates work of sticking coating to fried food ingredients, and can be firmly stuck, to provide the lightweight fried food coating material obtained by the method, to provide fried food frozen food using the coating material, and to provide a method for producing the fried food frozen food. <P>SOLUTION: This method for producing the fried food coating material comprises processes of mixing a core material which contains a specific amount of starch from which amylose is removed and/or rice cake grain starch and whose specific ratio or higher is pregelatinized, with a moisture-absorbing core raw material which contains oil and fat powder; mixing the mixed moisture-absorbing core raw material with a water-containing aqueous solution at a specific ratio to prepare a moisture-absorbing core material; mixing the moisture-absorbing core material with coating powder, to prepare a coated moisture-absorbing core material; mixing the coated moisture-absorbing core material with a water-containing aqueous solution at a specific ratio; and preparing a coating material which has a particle size distribution with major axis of 0.01-16 mm, including a coating material of major axis of 5-8 mm. <P>COPYRIGHT: (C)2009,JPO&INPIT |
