<P>PROBLEM TO BE SOLVED: To provide a method for producing a fried bean curd having soft and proper texture, without having to use frying processes which use oil. <P>SOLUTION: The method for producing a fried bean curd comprises heating fried bean curd dough prepared from bean curd, obtained by coagulating soy milk where edible oil is emulsified with superheated steam. In the method, the fried bean curd contains edible oil so as to prepare the fried bean curd, having the same flavor and palate feeling as those of a conventional fried bean curd via superheating with the superheated steam, without using frying process. The method has the advantage that the fried bean curd does not require edible oil which is used in large quantity in conventional methods, has low calorie and is healthy. <P>COPYRIGHT: (C)2009,JPO&INPIT |
